Stuffed Pepper Soup

It’s warming up in the Midwest for a short time and we aren’t complaining! Speaking of warming up... we are loving this stuffed pepper soup! So easy and can be made on the stove or in the instant pot! Recipe below!



INGREDIENTS:
3 cups cooked brown rice (we use Uncle Bens 90 second rice)
1 lb 95% lean ground beef
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 cup finely diced onion
3 cloves garlic, chopped
1 can (14.5 oz) cans petite diced tomatoes
1 jar @Classico_sauce ( we use Classico Rustico)
2 cups reduced sodium, fat-free chicken broth
1/2 tsp dried marjoram
1 bay leaf
salt and fresh pepper to taste



DIRECTIONS:
In a large pot brown ground meat on high heat and season with salt.


Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic.

Cook about 5 minutes on low heat.
Add tomatoes, tomato sauce, chicken broth, marjoram, bay leaf and season with salt and pepper to taste. Cover and simmer on low heat for 30 minutes.

Easy Minestrone Soup

Who doesn't love a good soup!? Especially when it is easy! You probably have most of these ingredients or something similar to it in your kitchen already. So if you are looking for a way to use up those veggies before they go bad, making a soup like this or something similar is a great way to do just that! You can even freeze it for meals later! 



INGREDIENTS:
1 cans (14.5 oz) diced tomatoes
2 tablespoons tomato paste
1 parmesan rind (optional)
4 cups chicken stock
2 cups water
1 cup carrots, diced
1 1/4 cup celery, diced
1 1/2 cup white onion, diced
4 – 5 cloves garlic, minced
1 teaspoon dried oregano
1 sprig rosemary (or 1/2 teaspoon dried)
2 bay leaves
salt and pepper to taste
1 can (15 oz) red kidney beans, drained and rinsed
1 1/2 cups zucchini, diced
1 1/2 cups @eatbanza shells
Finely shredded Parmesan cheese, for serving (or Romano (optional)

Chicken Cous Cous Soup

If you are ever feeling a little under the weather and need something warm and satisfying, this chicken cous cous soup really hits the spot. Packed with anti-inflammatory ingredients like ginger, turmeric and garlic it’s just what the doctor ordered!  So good, even if you aren’t feeling under the weather! We used rotisserie chicken to speed up the process, because let's face it..we're moms and "we ain't got time for that!"

INGREDIENTS:
  • 1 tablespoon avocado oil or olive oil
  • 6 cloves of garlic, minced
  • 1 yellow onion, diced
  • 2 large carrots, thinly sliced
  • 2 celery stalks, roughly chopped
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon fresh grated turmeric (or 1 teaspoon ground turmeric)
  • 6 cups low sodium chicken broth
  • 1 rotisserie chicken
  • 1 teaspoon freshly chopped rosemary
  • 1 teaspoon freshly chopped thyme, stems removed
  • ½ teaspoon salt
  • Freshly ground black pepper

Chicken Zoodle Pho

HELLOOO WINTER!!! Well we woke up to ice and 28 degree weather, so I was craving a big bowl of this chicken zoodle pho. Even though it looks fancy, no worries, it isn't! This soup is made with bone broth which, contains protein and a healthy dose of collagen to fill you up and MAYBE even help your hair, skin and nails! Recipe below!


INGREDIENTS: 

1/2 tablespoon coconut oil

1 tablespoons minced fresh ginger

1 tablespoons minced garlic

1 quart @bonafideprovisions chicken bone broth

1 zucchini, zoodled 

1 summer squash, zoodled 

2 small bok choy

2TBS Asian micro greens (optional)

1 store-bought rotisserie chicken, meat shredded

Fresh cilantro

Red pepper flakes

Dash of salt


DIRECTIONS:

In a medium saucepan, heat the oil over medium heat. Add the ginger and garlic and sauté until fragrant, 1 to 2 minutes. Add the broth and dash of salt. -Bring to a boil, and cook for 2 to 3 minutes, or until cooked through.
