Veggie Quinoa Salad

This might be one of the most refreshing salads we have ever made! Perfect for the start to Spring! Full of veggies, protein and fiber to fill you up and leave you satisfied!

INGREDIENTS:
1 can of black beans, drained & rinsed
1 can of corn, drained & rinsed
1 green pepper, chopped
1 red pepper, chopped
1 red onion, chopped
1 cup cherry tomatoes, halved
1 bunch fresh parsley, chopped (more or less to taste)
Red Wine Vinegar to taste
Salt to taste
Pepper to taste
1-2 cups cooked Quinoa

DIRECTIONS:
Mix all ingredients together, chill and enjoy!
